Arugula, Watermelon and Feta Salad

This salad is the ultimate salad for summer: it's light, refreshing and bursting with the flavor of a seasonal fruit. I really liked the combination of the sweet watermelon paired with the peppery arugula (one of my favorite vegetables) and the tangy feta cheese. Even though I was initially hesitant to add that much mint, I'm glad I did! It really adds a great flavor. The vinaigrette by itself is a bit bland but the salad has the perfect amount of saltiness thanks to feta. I had this salad as a main course, but I bet it would make an awesome side dish for grilled lamb or shrimp! Do you guys have a favorite summer salad?

(Adapted from Ina Garten; makes 2 servings)

Ingredients:
SALAD
3 cups baby arugula
2 cups watermelon, rind removed and cut into 1-inch cubes
1/2 cup mint, julienned
6 oz feta cheese, cut into 1/2-inch cubes

VINAIGRETTE
1 small shallot, minced
4 tbsp olive oil
2 tbsp orange juice
2 tbsp lemon juice
1/2 tbsp honey
1/2 tsp salt
1/4 tsp black pepper

Directions:
- Put all the vinaigrette ingredients in a container with a lid and shake until emulsified.
- Pour the vinaigrette over the salad and toss to combine.

  1. I looove this idea! It's so pretty and I love watermeon so much. The feta seems weird with watermelon but I like trying different flavoe combos. :)
